I really thought this must be a joke when I read this receipe that called for hash brown croutons. But no, it’s for real! Here is the receipe for a new Caesar salad. I’m going to try it, will you? Here is some history on the Caesar Salad for you.
Caesar dressing; 2 TBS. lemon juice, 2-1/2 TBS. Mayo, 1 med. garlic glove-minced to paste, 1/4 tsp. worcestershire sauce, S & P, whisk together, then slowly whisk in 5 TBS. olive oil, stir in 1/4 cup Parmesan Cheese. Set aside.
Salad; 4 frozen hash brown patties, still frozen, cut into 1″ squares, 2 TBS. olive oil, 8 cups chopped romaine hearts (3 large hearts), 3 hard-cooked eggs-chopped, 1/4 cup coarsely grated Parmesan cheese.
Place hash browns in 12″ skillet over medium heat. Place hash browns in bowl and drizzle with the oil to coat. Add Hash Brown cubes to hot skillet, toast, turning only once until crisp, about 10 minutes. Turn off and let stand until ready to toss. Place lettuce and eggs in a large bowl, add dressing and hash brown, toss to coat, add cheese and toss again.
Sounds yummy to me! And that’s what could be for dinner tonight!!!
